Warm-You-Up Recipes: Vegetarian Chili with Avocado Cream

It is definitely soup weather…HEARTY soup weather! As we start the new year thinking a little more about being healthy, I thought we all would enjoy something hearty, healthy, and of course, delicious.

I adapted this recipe from a great source. During my televised cooking show years, I was often introduced as the local Martha Stewart. I interviewed her three times, but had no idea until recently that my great grandmother’s name was Martha Stewart…spelled the same way. I found that fascinating and ironic. So this recipe sources for this are a combination of Martha Stewart’s great granddaughter and the really famous Martha Stewart.

Vegetarian Chili with Avocado Cream

Ingredients
  1. 2 Tbsp. olive oil
  2. 1 large onion, chopped
  3. 3 garlic cloves, chopped
  4. 1 ½ cup diced sweet potatoes
  5. 2 tsp ground cumin
  6. 1 ½ tsp oregano
  7. 2 tsp chili powder
  8. 2 (14 oz) cans diced tomatoes with green chilies
  9. 1 (6 oz) can tomato paste
  10. 2 cups water
  11. 1 bay leaf
  12. 1 ½ tsp. salt
  13. ½ tsp ground pepper
  14. 1 (15 oz) can black beans
  15. 1 (15 oz) can pinto beans
  16. 1 (15 oz) can kidney beans
  17. 1 Tbsp. chopped cilantro
  18. Avocado Cream Ingredients
  19. 2 ripe avocados
  20. Coarse salt
  21. 1 tbsp. chopped jalapenos
  22. 2 Tbsp. fresh lime juice
  23. Pinch chili powder
  24. ¼ cup sour cream
  25. Salt and pepper, to taste
Instructions
  1. Soup: In a large pot, heat olive oil. Stir in onion, garlic and sweet potatoes. Cook and stir about 4 minutes. Add cumin, oregano and chili powder. Cook, stirring constantly about 1 minute more. Add tomatoes with chilies, tomato paste and water. Bring to a simmer. Stir in bay leaf, salt, pepper and the beans. Reduce heat, cover and simmer for about an hour. Check to see if more water is needed. Just before serving, stir in the chopped cilantro. Serve with Avocado Cream.
  2. Avocado Cream Directiions: Mash avocados and add remaining ingredients. Season with salt and pepper to taste. This also makes a tasty dip for chips.
