Recipe Revamp: Crispy Baked Chicken Parmesan

My son does not like turkey, but one of his most favorite home-cooked meals is Crispy Baked Chicken Parmesan.

Now that he lives in Dallas and travels the world every week, he doesn’t get to enjoy this favorite very often. With that, he decided to let this favorite dish be our new Thanksgiving tradition.

Turns out, everyone prefers this entrée from one of my first cookbooks. To make it fit for the family holiday, I found some fun craft ideas at Michael’s Craft Store and decorated each chicken breast to remind everyone that it is Turkey Day.

This make-ahead dish is tender, moist inside and crisp and crunchy on the outside. The truth is, it’s delicious any day! Enjoy.

Instructions
  1. Melt the butter and stir in the garlic, Worcestershire Sauce, and dry mustard. Set aside.
  2. In a shallow dish combine the breadcrumbs, Parmesan cheese, parsley and French-fried onions.
  3. Dip each chicken breast half in the butter mixture and then in the breadcrumb-onion mixture. Place in a 9 X 13-inch baking dish. Drizzle any remaining butter mixture over the chicken.
  4. Bake at 350 degrees until chicken is tender, about 1 hour. My favorite way to bake it, if time permits, is to cover the dish with foil and bake at 300 degrees for 2 hours. Remove the foil during the last 30 minutes to let chicken brown. This makes the chicken even more moist and tender on the inside.
