Make in Minutes: Blueberry-Banana Oatmeal Muffin in a Mug

I really enjoy “mug” recipes because they allow me to satisfy my sweet tooth, without the temptation of getting another slice. These are also a great option for breakfast! That’s why, in honor of National Oatmeal Muffin Day, I’m sharing a quick, easy, delicious recipe for Blueberry Oatmeal Muffins – in a mug!

Blueberry-Banana Oatmeal Muffin in a Mug
  1. 1/3 cup milk
  2. 1/3 cup banana, mashed
  3. 1 egg
  4. 2 tsp honey
  5. 1 tsp brown sugar
  6. 1/8 tsp vanilla extract
  7. 1/2 cup old fashioned oats
  8. 1/2 tbsp. ground flaxseed
  9. 1/4 tsp cinnamon
  10. 1/3 cup blueberries
  1. Spray large mug with cooking spray or coconut oil. Mash banana, and mix together milk, the egg, honey and vanilla. Stir in the oats and cinnamon until well-blended, then fold in the blueberries.
  2. Microwave on high for 2 minutes and check density. Continue microwaving in 30-second increments until your muffin is cooked through.
