Dinner Party Recipes: My Favorite Casual Meal for Family

Not only do I enjoy eating Mexican food, I enjoy preparing it, too! In fact, this meal consists of a variety of Mexican-influenced dishes – and a traditional dessert.

My children love for me to serve this meal anytime, especially when they have friends to enjoy it with us. It makes a delicious make-ahead meal to enjoy while watching your favorite team play this fall.

Read on for five recipes to make an appetizing meal, including guacamole, chicken enchiladas, black bean salad and margarita slush.

Great Guacamole

Ingredients
  1. 4 ripe avocados
  2. Juice of 1 lime
  3. 1 tsp. coarse grain sea salt
  4. ½ cup diced red onion
  5. 4 Tbls. Chopped fresh cilantro
  6. 2/3 cup chopped ripe tomato
  7. ½ tsp. minced garlic
  8. Dash of cayenne pepper
  9. Tortilla chips
Instructions
  1. Peel, pit and mash the avocados. Place in a medium mixing bowl. Stir in remaining ingredients. Serve with tortilla chips.

Barbara’s Black Bean Salad

Ingredients
  1. 1 can (15 oz) corn, drained
  2. 1 can (15 oz.) black beans, drained
  3. 2 cloves garlic, minced
  4. 1/3 cup chopped onion
  5. 1/3 cup chopped red bell pepper
  6. 1/3 cup chopped green bell pepper
  7. ½ avocado, chopped
  8. 1/3 cup chopped cilantro
Mix all ingredients and toss with dressing made by mixing
  1. 2 Tbsp fresh lime juice
  2. 1 Tblsp honey
  3. 1 tsp gound cumin
  4. 1 tsp red pepper sauce
  5. 1 tsp rice vinegar
  6. Salt to taste

Frozen Margarita Punch

Ingredients
  1. 2 (12 oz) cans frozen limeade concentrate, thawed
  2. 6 cups water
  3. 1 ½ cups orange-flavored liqueur, such as Triple-Sec
  4. 1 ½ cups tequila
  5. 1 (2-liter) bottles lemon-lime carbonated beverage, chilled
Instructions
  1. Combine limeade, water, orange- liqueur, and tequila. Freeze for at least 8 hours. Break into chunks, add lemon-lime beverage and stir until slushy.

Easy Chicken and Cheese Enchiladas

Ingredients
  1. 1 (19oz.) can red enchilada sauce (divided)
  2. 2 cups shredded Monterey Jack cheese (divided)
  3. 1 cup sour cream (divided)
  4. 1 (4 oz) can chopped green chiles
  5. 1 tsp. sugar
  6. 1 tsp. ground cumin
  7. 4 cups roasted chicken (rotisserie works well)
  8. ¼ cup chopped cilantro
  9. 12 flour tortillas
Instructions
  1. Combine ½ can of the enchilada sauce, 1 cup of the cheese, ½ cup of the sour cream, all of the green chiles, sugar, cumin, roasted chicken and cilantro.
  2. Spray a 9 x13 baking dish with non-stick spray. Soften tortillas in heated pan if necessary. Spread the filling along the center of the tortillas, gently roll up and place seam side down in baking dish. Spread the remaining enchilada sauce evenly over each tortilla. Dot with the remaining sour cream. Sprinkle the rest of the cheese over the tortillas.
  3. Bake at 400 degrees until hot and bubbling throughout, about 15 minutes if baking immediately, or 30 minutes if the enchiladas have been prepared earlier and refrigerated.
Notes
  1. Optional garnishes: chopped cilantro and black olives

Barbara’s Brownies

Brownie Ingredients
  1. 4 eggs
  2. 2 cups sugar
  3. 1 cup flour
  4. 1 Tbsp. vanilla extract
  5. 1 cup butter
  6. 4 ounce unsweetened chocolate
Frosting Ingredients
  1. 1 stick butter
  2. 4 Tbls cocoa
  3. 6 Tbls milk
  4. 1 tsp vanilla
  5. 1 box confectioners’ sugar
  6. 2 cups mini marshmallows (optional)
Instructions
  1. Brownies: Beat the eggs and sugar. Mix in the flour and vanilla. Melt the butter and chocolate in a heavy saucepan (I used the microwave), stirring to blend. Add to the batter and mix well. Spread into greased 9 x 13-inch pan. Bake at 350 degrees for 25 minutes. Be careful not to overcook. Check after about 22 minutes.
  2. Frosting: In a saucepan, bring to a boil butter, cocoa and milk. Boil and stir 1 minute. Remove from heat and stir in vanilla. Gradually stir in confectioners’ sugar. Stir in marshmallows and spread over brownies.

    1. Thank you, Agnes!! The black beans, the MAIN ingredient, were left out of the recipe. Thanks to you, that is now corrected. A (15oz) can of drained black beans go in right after the corn! You are so kind to bring that to my attention.
