Waistline-Friendly Recipes: Celebrate National Cheese Pizza Day with Garlic Cauliflower Crust

One of my favorite things to cook with at the moment is cauliflower. It’s an extremely versatile ingredient and an excellent, gluten free, low-carb alternative to heavy starches, such as white bread, potatoes and rice (click here for my Cilantro Lime Cauliflower Rice recipe).

In honor of National Cheese Pizza Day today, I’d like to share a Cheesy, Garlic Cauliflower crust I’ve adapted from a recent dinner with friends. Get the delicious, nutritious recipe below!

Instructions
  1. Preheat oven to 450F.
  2. Remove stem from cauliflower and break florets small/medium pieces. Place in a food processor until pieces of cauliflower are finely ground.
  3. Measure out 2 cups of cauliflower and place it in a bowl. Sprinkle salt, garlic powder, almond flour and ½ cup of cheese over the cauliflower. Add eggs and stir mixture until all ingredients are well-blended.
  4. Roll mixture into ball and form a flat crust on a piece of parchment paper and/or baking sheet. Pizza should be a little more than 10 inches in diameter.
  5. Bake for 25-30 minutes. When you begin to see brown flecks on the crust, add ½ cup of mozzarella and bake for an additional 7-10 minutes.
  6. Serve and enjoy!
