I really enjoy “mug” recipes because they allow me to satisfy my sweet tooth, without the temptation of getting another slice. These are also a great option for breakfast! That’s why, in honor of National Oatmeal Muffin Day, I’m sharing a quick, easy, delicious recipe for Blueberry Oatmeal Muffins – in a mug!
- 1/3 cup milk
- 1/3 cup banana, mashed
- 1 egg
- 2 tsp honey
- 1 tsp brown sugar
- 1/8 tsp vanilla extract
- 1/2 cup old fashioned oats
- 1/2 tbsp. ground flaxseed
- 1/4 tsp cinnamon
- 1/3 cup blueberries
- Spray large mug with cooking spray or coconut oil. Mash banana, and mix together milk, the egg, honey and vanilla. Stir in the oats and cinnamon until well-blended, then fold in the blueberries.
- Microwave on high for 2 minutes and check density. Continue microwaving in 30-second increments until your muffin is cooked through.
