Joey Profeta has been managing The Palm in Charlotte, NC for 20 years. This former chef not only knows great food, but also how to treat guests, making every person feel at home, even if it is their first visit. Joey graduated from the Culinary Institute Of America and is so talented in the kitchen that he trains chefs for The Palm around the country, but his hospitality is equally superlative. His presence just makes you smile. The Palm has been THE place to celebrate special events since it began in New York City in 1920.  They now have approximately 30 locations.  

Yes, it’s a wonderful place to celebrate special occasions, but I also love to just pop in casually for lunch and enjoy some of their specials and specialties, like their Seafood and Vegetable Salad, aka Gigi’s Salad.

Colin Johnson, the talented Executive Chef, who pours his heart and soul into every Palm dish, kindly shared that recipe with all of us.   1. For each individual salad, toss the tomato, onion, green beans, roasted red pepper, lettuce, bacon bits and shrimp with the vinaigrette. Arrange on a plate. Top with avocado and egg. Add more dressing of choice, if desired.
